Dungeness Crab Cakes with Whole Grain Mustard, Tomato Compote and Chives

Crab Cakes:

What You'll Need

  • 2lbs crabmeat, cooked
  • 1/3c fresh chives, chopped
  • 1 1/2 cups Panko (you can also use regular breadcrumbs if preferred)
  • 2tbsps whole grain mustard
  • 1/4c white wine
  • juice from 1 lemon
  • 2 eggs
  • 3/4c mayonnaise
  • 1/2tsp Worcestershire sauce
  • 6 dashes chipotle-flavored Tabasco
  • salt and pepper to taste
  • butter for sauteing

How You'll Do It

  • Squeeze any excess moisture from the crabmeat; remove a few flakes of the meat to use for garnish later
  • Combine all ingredients for the cakes together EXCEPT for 1/2 of the Panko
  • Let stand for 30 minutes then adjust seasoning
  • Shape crab into 12 cakes and coat with the reserved Panko
  • Melt butter in a saute pan over medium heat
  • Saute cakes on all sides till golden and hot in center

Tomato Compote:

What You'll Need

  • 1c tomato concasse
  • 1/4c EVOO
  • 3tbsps balsamic vinegar
  • 1tsp garlic, chopped
  • 3tsps fresh chives, chopped
  • salt and pepper to taste

How You'll Do It

  • Combine all ingredients and let sit for 30 minutes to allow the flavors to infuse together
  • Pour off any excess liquid and adjust seasoning before serving
  • Should be served at room temp or slightly warmed

Sauce:

What You'll Need

  • 2tbsps shallots, minced
  • 1/4c white wine
  • 1/2c whole grain mustard
  • juice from 1 lemon
  • 2c heavy cream
  • 2tsps fresh chives, chopped
  • salt and pepper to taste

How You'll Do It

  • Place shallots and wine in a saucepan and reduce until almost dry; add the mustard and lemon juice and cook for an additional minute
  • Add fresh cream and simmer gently; reducing by approximately half or until thickened so that it coats a spoon
  • Add chives and season

Bringing the whole dish together is simple; just serve two crab cakes on each plate with a spoon of the sauce and compote and garnish with your crab flakes and chives.
